I'm Mimo and you've somehow stumbled upon my new blog.

So why a plate full of plants? I realized awhile ago that I needed to eat more vegetables then came a little known (well not exactly) film called Food Inc.. From there everything started to come together for me. I became more conscious of what I was eating, how the American food industry works, its impact on our environment and meat in particular. Months later I was just out of grad school and starting a new job in a new town where I wasn't satisfied with my food options. I started wondering, do I really need to eat meat? Can I go without it? How can I eat better? Well that was that and in true Mimo fashion I just set a date and stopped eating meat. The road since becoming a vegetarian wasn't always a healthy one and soon I was gaining weight. I knew I needed to figure out how to be a healthier vegetarian...and then I found Eat to Live (ETL). Four weeks later, my pants are looser, I'm feeling better nourished and energized all at once.

Now, I'm on a mission to get through ETL's 6-week plan which I amount to a serious eating bootcamp that I hope will jump start my mental and physical self into a Nutritarian lifestyle.

So here I am to share the rest of my journey with you!
